TransQuaPil (2018-2021)

Pilot fruit and vegetable processing to enhance their natural qualities: development of an instrumented cooking robot for continuous mesurement.

This Qualiment project associates 4 Carnot partner units including 3 INRA units:

The main objective of the project is to identify markers of quality correlated to the evolution of the texture of an F&V mash and to follow them online and in real time by the instrumentation of a cooking robot, in order to drive transformation processes.
